Sensational Summer Salads
It’s the height of summer and you know what that means…BARBEQUE SEASON! It’s only the beginning of July and I’ve already been invited to 4 potluck backyard barbeques. I was stressing about what to bring until I realized I had the ultimate summer salad recipe duo. This recipe duo is perfect because it handles both sweet and savory. Plus, they’re both super easy to pull together last minute. Feel free to make them for your next summer barbeque potluck!
Radish Salad
2 Cups Radishes, Sliced
½ Teaspoon Salt
1 Cup Onion, Sliced
1 Cup Cucumber, Sliced
½ Cup Extra Virgin Oil
2 Tablespoons White Wine Vinegar
½ Teaspoon White Sugar
1 Clove Garlic, Minced
1 Teaspoon Fresh Dill, Chopped
- Toss radishes with salt and let sit for 10 minutes. Drain any liquids and transfer to large bowl.
- Add red onion and cucumber to the bowl with radishes.
- Whisk olive oil, vinegar, sugar, garlic and dill in a small bowl until well combined.
- Pour over vegetables and toss to combine.
- Cover and refrigerate for at least an hour and until ready to serve.
Snickers Salad
1 (3.4 oz) Package Instant Vanilla Pudding
1 Cup Milk
1 (8 oz) Container Cool Whip
5 Granny Smith Apples, Chopped
5 Full-Size Snicker Bars, Chopped
½ Cup Grapes. Cut In Half
½ Cup Strawberries, Sliced
- Combine pudding mix and milk in a large bowl.
- Fold in the Cool Whip
- Add apples, snickers, grapes and strawberries to mixture and fold to combine.
- Refrigerate until ready to serve.
